Ingredients

500 g chunky cottage cheese
¼ cup honey
1 t vanilla essence
250 g almond flour
125 g desiccated coconut or protein powder
60 g chocolate chips
¼ cup peanut butter (optional)

Method

1. In a mixing bowl, blend the cottage cheese with a hand mixer until smooth. Add the honey and vanilla essence and mix until well combined.

2. Stir in the almond flour, desiccated coconut (or protein powder) and chocolate chips, and mix until just combined. Add the peanut butter (if using) and mix until incorporated.

3. Scoop the chilled dough into balls and enjoy as a snack. For a fun twist, you can roll the balls in additional coconut or chocolate chips.
