10 minutesWhisk the eggs, then add the chopped bananas. Blend until smooth using a hand-blender.
Heat a large frying pan over medium heat, then spray the pan with cooking spray.
Ladle the banana mixture into the hot pan to form a round flapjack. Fry for 2–3 minutes, then turn over and cook the other side. Repeat with the remaining batter, spraying the pan with cooking spray before frying each flapjack.
Drizzle with condensed milk, if using, and lemon juice before serving.
Cook's tip: These flapjacks are very delicate - turn with care! A good non-stick pan helps. Another top tip is to make them quite small. You can hide all sorts of veggies in them. Blitz in a handful of chopped sweetcorn, baby marrows or some baby spinach leaves.
