Buttermilk-soaked oats with berries

Ingredients

  • 180 g raw rolled oats
  • 4 cups buttermilk, plus extra for serving
  • 2 green or red apples
  • 1 lemon, juiced
  • 80 g blueberries
  • 50 g flaked almonds, toasted

1. Mix the oats and the buttermilk, cover and chill for at least two hours.

2. Just before serving, grate the apples and squeeze over some lemon juice to prevent them from turning brown.

3. Spoon the soaked oats into bowls and top with the apple, blueberries and toasted almonds. Pour over a little buttermilk and serve.

Chef's note: Kick-start your mornings with this tangy version of Bircher muesli served with your favourite fruit. Soak the oat from the night before for a fast breakfast that packs a punch.
