  • 210 g Woolworths Cake Wheat Flour
  • 200 g Woolworths Brown Sugar
  • 1 t Woolworths Bicarbonate of Soda
  • ½ t salt
  • 2 Woolworths Free Range Eggs
  • 1 cup mashed avocado (approximately 2 medium-sized avocados)
  • 2 limes, zested
  • ½ cup Woolworths Avocado Oil
  • ¼ cup Woolworths Buttermilk
  • 1 t Woolworths Vanilla Extract
  • For the lime drizzle:
  • 130 g Woolworths Icing Sugar
  • 2 limes, juiced and zested

Method

Ingredients

1. Preheat the oven to 180°C.

2. Combine the flour, sugar, bicarbonate of soda and salt. Place the eggs, avocado, lime zest, avocado oil, buttermilk and vanilla in a separate bowl.

3. Whisk the wet ingredients, then stir into the dry ingredients. Do not overmix the mixture; stop mixing as soon as the two are combined.

4. Pour the batter into a greased 20 x 11 cm loaf tin and bake for 1½ hours, or until a skewer inserted comes out clean. Allow to cool, then pour over the lime drizzle.

5. To make the lime drizzle, mix the icing sugar and lime juice until smooth and thick.
