  • 8 eggs
  • 1/2 cup milk
  • Salt and Pepper
  • 3 T avocado oil
  • 2 avocados, thickly sliced
  • 1/2 t Cajun spice

Cooking Instructions

Beat the eggs, milk, salt and pepper in a bowl.

Pour avo oil into a large non-stick frying pan, heat on medium.

Add the egg mixture and stir gently until starting to set.

Stir through sliced avocados and sprinkle with Cajun spice.
