Bacon, egg and beef breakfast buns

These hearty breakfast buns are filled with beef, streaky bacon, spinach, fluffy eggs and melted Cheddar for an easy grab-and-go breakfast. Make them ahead, store them in the fridge and simply heat when needed for busy mornings when there’s no time to cook.

Ingredients

Method
  • 1 tbsp olive oil
  • 1 x 4 -pack Woolworths Free Range Beef Burgers
  • 1 x 250 g Woolworths Streaky Wood Smoked Bacon
  • 50 g baby spinach
  • Sea salt and freshly ground black pepper, to taste
  • 10 Woolworths XL Free Range Eggs
  • 2 x 4 -pack Woolworths Our Ultimate Burger Buns
  • 150 g Woolworths Sliced Cheddar

Method

Ingredients

1. Heat olive oil in a pan and break chunks of the beef burgers into the pan. Brown for 3–5 minutes.

2. Add strips of bacon and crisp for 5–8 minutes. Sauté the baby spinach and season with salt and pepper.

3. Whisk the eggs with salt, lower the heat of the pan and pour the mixture into the pan. Leave to cook for a minute, then gently push the outer edges of the frittata towards the centre. Repeat this process until the frittata is just cooked and fluffy.

4. For a quick breakfast, portion out frittata, add to burger buns with a slice of cheese. Wrap in baking paper and store in an airtight container in the fridge.

5. Before leaving the house, heat in the microwave and enjoy on the go.
