Ingredients

Method
  • 100 g cake flour
  • 100 g oats
  • 100 g light brown sugar
  • ½ t salt
  • 150 g butter
  • 3 T vanilla
  • 1 lemon, zested
  • 1 T cinnamon, (optional)
  • 2 x 400 g cans peaches in light syrup
  • vanilla ice cream, for serving

Method

Ingredients

1. In a mixing bowl, combine the flour, oats, cinnamon, sugar, lemon zest, vanilla, salt and butter, crumbling the ingredients together with your fingertips.

2. Preheat the oven to 180°C. Place the peaches and their syrup into a baking dish, then sprinkle over the crumble. Bake for 45 minutes, or until the topping is golden and the syrup is bubbling slightly. Serve in bowls, topped with vanilla ice cream.
