Chocolate overnight oats with salted date caramel

Chocolate overnight oats get an indulgent upgrade with a creamy salted date caramel made from Medjool dates and coconut cream. Rolled oats, yoghurt, hemp seeds and a breakfast seed mix make this a satisfying make-ahead option, while fresh fruit and whipped coconut cream add a little extra at serving time. Prepare it the night before for an easy breakfast or suhoor.

Ingredients

Method
  • 2 cups Woolworths rolled oats
  • 3 cups Woolworths PlantLove™ unsweetened almond & rice drink
  • 1 cup Woolworths double cream plain yoghurt
  • 2 tbsp Woolworths cocoa powder
  • 3 tbsp Woolworths hulled hemp seeds
  • 3 tbsp Woolworths breakfast seed mix
  • 1 tsp sea salt flakes
  • For the salted date caramel

  • 400 g Woolworths Medjool dates, pitted
  • 1 tin Woolworths coconut cream
  • 1 tbsp sea salt flakes
  • To finish

  • fresh fruit
  • whipped coconut cream

Method

Ingredients

1. Combine all of the ingredients for the oats in a bowl and set in the fridge for a few hours or overnight.

2. In a high-speed blender, add all of the ingredients for the salted date caramel and blend until smooth.

3, Place the fruits in your bowls or glasses and divide the oat mixture evenly between them. Top with salted date caramel and finish with whipped coconut cream if desired.

Chef’s tip: This keeps well for 2–3 days in the fridge if you don’t add the fresh fruit.
