Some dishes are a signal of being home. Samp, made from crushed maize, sits at the very heart of Botswana's food story. It's been on tables across Botswana for generations, not because it's elaborate, but because it doesn't need to be. From my early childhood to today, samp has appeared during holidays, gatherings and occasions, rightfully taking its place on my plate since before I could ask for it, and to be honest, I’ve never stopped reaching for it. Slow-cooked and never rushed, patience is its secret ingredient. Some food feeds the body. Samp feeds the soul.
