Grilled corn and bean salad wraps

Ingredients

Method
  • 1 sachet fresh cut corn
  • Olive oil
  • 1 can butter beans, drained
  • 1 sachet torn crisp lettuce leaves
  • Tortillas
  • To make a fresh lime and chilli dressing, blend together:
  • The juice of 1 – 2 limes
  • Squeeze of honey
  • 1 chopped green chilli
  • Handful of coriander leaves
  • 1/3 cup Olive oil
  • Salt to taste

Moisten a sachet of fresh cut corn with olive oil and slide under a hot grill for about 5 minutes, turning around once, until starting to char. Season lightly. Mix together with beans, lettuce and dressing. Wrap in soft, warm tortillas.
