Home-made red curry paste

  • 4 baby onions, quartered
  • 1 x 5 cm fresh ginger piece, peeled and sliced
  • 4 garlic cloves
  • 4 lemongrass stalks
  • 2 red chillies, 1 seeded and both chopped
  • 1 red pepper, grilled, sweated and peeled
  • 30 g pine nuts
  • 1 T turmeric powder
  • 2 T cayenne pepper
  • Salt a pinch

Place all the ingredients in a food processor and blend into a paste. Transfer to an airtight sterilized jar or plastic container and refrigerate for up to two weeks.
