Mashed pea and avo pasta salad

A creamy pea-and-avocado sauce does double duty in this easy meal-prep recipe. Toss it through orecchiette with crunchy sprouts and your choice of chicken, tuna or falafel, or spread it into wraps with crisp vegetables and PlantLove™ rounds. Fresh mint and lemon keep the sauce bright, making it a versatile base for quick lunches throughout the week.

Ingredients

Method
  • 1 cup Woolworths frozen peas, blanched
  • 2 Woolworths Flavourburst™ avocados
  • 5 g mint leaves
  • 1 lemon, juiced
  • salt and pepper, to taste
  • For the pasta salad:

  • 250 g Woolworths orecchiette pasta, cooked according to package instructions
  • 20 g Woolworths crunchy sprouts
  • 100 g - Woolworths BBQ chicken mini fillets or
  • OR
  • 100 g Woolworths albacore white tuna fillets in olive oil
  • OR
  • 1 x 150 g Woolworths falafel
  • For the wrap:

  • 1 T olive oil
  • PlantLove™ Swiss chard, sweetcorn & butter bean rounds
  • 10 g Woolworths julienne carrots
  • 10 g Woolworths julienne beetroot
  • 10 g mung bean sprouts
  • 1 x 4 pack Woolworths quinoa & carrot wraps

Method

Ingredients

1. Blend the blanched peas and avocado together with the mint and lemon, season to taste.

2. For the pasta salad, stir the pea and avo mix through al dente pasta and place in a lunch container. Top with Woolworths Crunchy Sprouts and protein of your choice.

3. Assemble the wrap, by adding a generous amount of the pea and avo mix to one of the Woolworths Quinoa & Carrot Wraps.

4. Cook PlantLove™ Swiss Chard, Sweetcorn & Butter Bean Rounds in the olive oil until brown and crispy. This should take about 5 minutes over high heat. Remove from the pan and leave to cook off the heat for a few minutes.

5, Add layers of the crunchy vegetables and sprouts. Top with PlantLove™ Swiss Chard, Sweetcorn & Butter Bean Rounds and you are set.
