- 6-10 medium courgettes, halved
- 2 tablespoons chopped fresh mint
- freshly ground black pepper
- 300 g halloumi cheese
Drizzle a griddle pan with a little olive oil. Fry the courgettes on both sides until golden brown.
Remove and lightly toss with mint and lemon juice.
Season with salt and black pepper. Slice the halloumi cheese into strips and place on a warm fire.
Cook quickly, turning once, then serve with the courgettes.
