A bold reimagining of a Swati staple; silky, naturally sweet, and dairy free. Okra's signature creaminess makes it a surprisingly perfect base for a no-churn ice cream that is as nourishing as it is delicious.

- 1 t bicarbonate of soda
- 10 fresh okra pods
- 2 large bananas, peeled, sliced and frozen
- 2 cup Woolworths Coconut Cream
- 3 T Woolworths Seasonal Honey, plus extra to sweeten to taste and to drizzle
- 4 Woolworths Large Sugar Cones, to serve
Method
Ingredients
1. Add bicarbonate of soda and ¼ cup water to a small pot and bring to a medium heat. Add okra pods, cover with a lid and allow to blanch until the water begins to bubble and the okra turns a vivid green.
2. Remove the okra from the pot and spread onto a tray. Allow to cool, then transfer to the freezer for 20 minutes. Chilling firms the okra and makes it easier to blend into a smooth, lump-free base.
3. Add the chilled okra, bananas, peeled, sliced and frozen, coconut cream, and honey to a high-speed blender. Blend on high until completely smooth and creamy with no visible okra pieces. Taste and adjust sweetness with a little more honey if needed.
