  • 200 g raspberries
  • 60 g fresh basil, plus extra to garnish
  • 2/5 cup sugar
  • 3/5 cup rum
  • 4 cups of sparkling mineral water or lemonade
  • 150 ml lemon or lime juice
  • 3 lemons, sliced

Cooking Instructions

Crush the berries, basil and sugar using a pestle and mortar.
Divide the berry mixture between six glasses.
Add a tot of rum, a splash of lemon or lime juice and a few ice cubes to each glass.
Top with sparkling water or lemonade and garnish with fresh basil leaves.
