- 200 g raspberries
- 60 g fresh basil, plus extra to garnish
- 2/5 cup sugar
- 3/5 cup rum
- 4 cups of sparkling mineral water or lemonade
- 150 ml lemon or lime juice
- 3 lemons, sliced
Crush the berries, basil and sugar using a pestle and mortar.
Divide the berry mixture between six glasses.
Add a tot of rum, a splash of lemon or lime juice and a few ice cubes to each glass.
Top with sparkling water or lemonade and garnish with fresh basil leaves.
