Ingredients

  • 1 x 400 g red kidney beans can, drained and rinsed
  • 8 radishes, sliced
  • 1 red onion, thinly sliced
  • 5 Peppadews, sliced
  • Microherbs, to garnish
  • For the dressing, mix:
  • 4 T sour cream
  • 4 T mayonnaise
  • 4 T buttermilk or sour milk
  • 1⁄4 lime, juiced
  • 1 garlic clove, crushed
  • 2 T fresh coriander chopped
  • Sea salt and freshly ground black pepper, to taste
  • Sugar, to taste

Cooking Instructions

Mix the salad ingredients in a large bowl and toss. Arrange on a platter and drizzle over the dressing. Garnish with microherbs.
