  • 1 cup self raising flour
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup soft sundried tomatoes, drained, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup cheddar cheese, grated
  • 1 teaspoon paprika powder
  • 1 teaspoon dried mixed herbs
  • pinch of salt

Cooking Instructions

Preheat oven to 200 oC. Prepare 6 muffin pan. Mix the flour with the tomatoes, feta, spices/seasonings and only 1/2 cup cheddar cheese. Add the milk and oil, mix. Spoon into muffin pan, sprinkle over the other 1/2 cup cheddar cheese. Bake for 20 minutes. Let rest in pan for 5 minutes.
