- 200 g pomegranate rubies
- 30 g rocket
- 10 caper berries, for garnishing
Using a melon baller, scoop out rounds of melon.
In a separate bowl, combine the melon balls with the pomegranate rubies. Line the melon halves with the rocket, then top with the pomegranate rubies and melon balls. Garnish with the caper berries.
