- 8 fresh figs, sliced into eighths lengthways
- 4 nectarines, julienne
- 4 t lime juice
- 2 t grated fresh ginger
- 4 t fresh mint, finely chopped
- 1 Thai chilli, seeded and chopped (optional)
Place the figs on the outer sides of four large plates.
Combine the nectarines, lime juice, ginger, mint and chilli.
Place in the centre of each plate.
Garnish with sliced lime and drizzle with fig-and-balsamic syrup.
