A British classic with a brilliant twist! Individual mini loaves replace the traditional baking dish, each one cradling a juicy sausage and filled with a light, crispy batter. Fun, hearty and full of flavour.

  • 2 large free-range eggs
  • 70 g flour
  • 1/2 cup milk
  • a pinch sea salt
  • 4 Woolworths white mini loaves
  • 4 sausages of your choice
  • 2 T canola oil
  • 2 T fresh chives, finely chopped

Method

Ingredients

1. Whisk together the eggs, flour, milk and salt to make a smooth batter. Set aside to rest for 30 minutes.

2. Preheat the oven to 200°C. Meanwhile, cook the sausages in a pan over a medium heat until browned all over. Set aside. Hollow the centre of each mini loaf, just enough to nestle a sausage snugly inside.

3. Pour the canola oil into a rectangular ovenproof dish and heat in the oven for 5 minutes until smoking hot. Working quickly, place each filled roll into the hot dish, then pour the batter around and into the rolls. Bake for 15 minutes or until the batter is puffed, golden and crisp.

4. Scatter with the chives and serve immediately.

Cook’s note: Resting the batter is key, don't skip this step! It helps create a lighter, crispier result. Onion gravy makes the perfect accompaniment.
