Devein a prawn

The dark “vein” you see along the tops of uncleaned prawns isn’t a vein at all, it’s the intestinal tract. It won’t kill you but can be unpleasant to eat. Here’s how to get rid of it.

Tip: After you’ve cooked and eaten your bounty, place the heads and shells in a plastic bag (use two if you’re worried), tie tightly and freeze until rubbish collection day. Your neighbours will thank you.

Method

    1. Using a small, sharp knife, make an incision along the top of the prawn, from just behind the head.

      Step 1

    2. Using the tip of the knife, lift out the vein, trying to get it out in one piece. Don’t worry if it breaks; simply remove the rest.

      Step 2

    3. Wash thoroughly in fresh water before cooking.
