Tips for cooking with chilli:
- Always remember that the white membrane and the seeds are the hottest parts of the chilli. If you don’t like it very hot, remove them before using.
- Wash your hands with cold water. It’s believed that hot water can make your skin absorb capsaicin, the compound that makes chillies hot.
- With chilli, chilli powder, chilli flakes and curry powder (if you prefer subtle heat to intense heat) it’s always best to start off small, adding more later on if necessary.
