Tofu balls with fettuccine

This quick plant-based dinner reimagines a classic dish with tofu as the star. Tofu balls in tomato sauce are spooned onto cooked fettuccine for a meal that’s every bit as good as a meaty Bolognese.
Ingredients

- 2 x 250 g Woolworths fettuccine pasta
- 2 x 300 g Woolworths PlantLove tofu balls in tomato sauce
- 2 T olive oil
- 120 g shiitake mushrooms
- sea salt and freshly ground black pepper, to taste
- 2 g basil
Method
Ingredients
- Bring a large saucepan of salted water to the boil and cook the pasta for 2–5 minutes, or until al dente.
- Cook the tofu according to package instructions.
- Heat the olive oil in a non-stick pan. Cook the mushrooms for 5–8 minutes and season to taste. Add the basil and toss with the mushrooms for 30 seconds, then remove from the heat.
- Toss the mushrooms with the cooked pasta and tofu balls to serve.
