Tofu balls with fettuccine

This quick plant-based dinner reimagines a classic dish with tofu as the star. Tofu balls in tomato sauce are spooned onto cooked fettuccine for a meal that’s every bit as good as a meaty Bolognese.

Ingredients

Method
  • 2 x 250 g Woolworths fettuccine pasta
  • 2 x 300 g Woolworths PlantLove tofu balls in tomato sauce
  • 2 T olive oil
  • 120 g shiitake mushrooms
  • sea salt and freshly ground black pepper, to taste
  • 2 g basil

Method

Ingredients
  1. Bring a large saucepan of salted water to the boil and cook the pasta for 2–5 minutes, or until al dente.
  2. Cook the tofu according to package instructions.
  3. Heat the olive oil in a non-stick pan. Cook the mushrooms for 5–8 minutes and season to taste. Add the basil and toss with the mushrooms for 30 seconds, then remove from the heat.
  4. Toss the mushrooms with the cooked pasta and tofu balls to serve.
