Ingredients

  • 1 free range eggs
  • 3 organic bananas
  • 1/4cup kerry gold/lurpak butter
  • 1tsp vanilla essence
  • 1 1/2cup eureka cakep flour
  • 3/4cup organic brown sugar
  • 1tsp bicarbonate of soda
  • 1/4tsp pink salt
  • 30g raw almonds

Cooking Instructions

Today I bring you something special, ORGANIC banana nut muffins. I've made a few batches over the past few weeks and each time they've been a big hit. Testing a recipe out more than once and getting raving reviews prove that it's pretty good and what's even better is that it's made from organic ingredients and honestly, I couldn't be happier.

What you'll need:
1 egg
3 organic bananas
1/4 cup of melted butter
1 tsp vanilla essence
1 1/2 cups cake flour
3/4 cup organic brown sugar
1 tsp bicarbonate of soda
1/4 tsp pink salt

Method:
Add flour, bicarbonate of soda, salt and sugar to a mixing bowl and whisk together. I've found that whisking your dry ingredients make the confection light and fluffy.
Add the egg, vanilla extract and butter together and mix well. Add it to your dry ingredients and mix the ingredients until you get a crummy consistency.
Add your bananas that you've mashed separately to the mixture and begin to fold your ingredients into one another and then add your crushes raw almonds.
Pour your mixture into a greased muffin tin and put in the oven for 180°C or 356°F
Once your muffins are ready, take them out of the oven and pop them onto a cooling tray and enjoy!

TIP:
Folding in instead of mixing makes it light and fluffy.
You don't need the mixture to be smooth, as long as it's well blended it's good enough. I prefer the rustic look to the "perfectly perfect" looking muffin. However, if you want a smooth consistency then use your potato masher and swish down until each lump is gone and you're left with a perfectly smooth mixture.
