5 essential pie recipes to master

Master these five pies and this winter will be the cosiest yet. From classics like chicken pie and fish pie, to an inspired cheese pie and a next-level lamb curry pie, there’s something for every palate.

1. The ultimate chicken-and-corn pot pies

There's nothing more comforting than a chicken pie, and this one ups the veg in take with added corn. Use leftover roast chicken (or even roast off some portions) and feel free to add in any other veggies you have knocking about, such as mushrooms, spinach or peas. You could also bake these as one large pie if you can't be bothered with the individual ones.

2. Fish-and-kale pie with sweet-potato topping

This one couldn't be easier – take any fish you have (frozen would work here!), make a creamy mix and top everything with sweet potato mash. Here again, you could use any root veg you have (such as butternut or regular potato - or a mix of the three), and bump up the pie with frozen peas.

3. Beef-and-beer pie with slow-roasted cipollini onions

This doubles up as a hearty winter dinner, and a weekend project as you'll need a bit of time to make the pastry and slow cook the beef. If you're not into the idea of making your own pastry, a store-bought shortcrust would be just as good.

4. Nana’s three-cheese-and-onion pie

A hug in food form, this cheesy pie has comfort food written all over it. Don't worry about the types of cheeses specified here, use whatever combination you like (just make up the same quantity). If you want, you could sneak some extra veggies in here too, such as broccoli, cauliflower or spinach.
