Matbucha, a salad with Moroccan and North African origins. It is a popular mezze salad in Israel and makes for a wonderful addition to your Hanukkah.
1. Fry the onions in the oil until soft and translucent. Add the remaining ingredients and cook over a low heat for 20–30 minutes, or until reduced by a third and thick.
Cook’s note: Use very ripe tomatoes. This is best served as a meze with bread.
