Decadent chocolate fairy cakes

Ingredients

  • 280 g self-raising flour
  • 1/3 cup cocoa
  • 1/2 cup caster sugar
  • 4 eggs
  • 250 g butter, melted
  • 1 1/3 cup milk
  • 200 g dark chocolate, melted
  • for the ganache

  • 200 g dark chocolate
  • 1/2 cup cream

Method

Preheat the oven to 190°C.
Line a 12-hole muffin tin with gold cupcake foils. Sift the flour, cocoa and caster sugar into a bowl.
Lightly beat the eggs, then add it, along with the butter, milk and melted chocolate, to the dry mixture.
Mix until combined, then spoon into the cupcake foils.

Bake for 10 to 15 minutes, or until a skewer inserted into the cake comes out clean.
Carefully remove the cupcakes from the tray and spread each with ganache.
To make the ganache:
Melt the chocolate and cream together, then remove from heat and allow to cool.
