Trout-and-grapefruit crudo

Ingredients

  • 400 g Woolworths Lightly Smoked Rainbow Trout, cubed
  • 1 grapefruit, cut into segments
  • mint, to garnish
  • coriander, to garnish
  • sesame seeds, toasted, to garnish
  • limes, for serving
  • For the soya-and-ginger dressing:
  • 4 T soya sauce
  • 4 T rice vinegar
  • 4 T fish sauce
  • 1 t fresh ginger, minced

Method

1. Place the fish onto a platter and drizzle over the dressing. Garnish with the mint, coriander and sesame seeds and serve with the limes.
