Ingredients

Method
  • 4 T extra virgin olive oil
  • 1 T smoked paprika
  • 1 T garlic, crushed
  • 1 T sesame seeds
  • 1 t cumin seeds
  • salt and freshly ground black pepper, to taste
  • 4 large brinjals, peeled and quartered
  • For the lemonade mayonnaise:
  • 2⁄3 cup Woolworths vegan mayonnaise
  • 1 lemon, zested and juiced
  • sea salt and freshly ground black pepper, to taste
  • 1 T brown sugar
  • a few sprigs mint, plus extra for serving
  • For the gremolata, mix:
  • 10 g Italian parsley, roughly chopped
  • 1 lemon, zested
  • 1 orange, zested
  • 1 t salt flakes
  • 10 g mint, roughly chopped

1. Combine all the ingredients except the brinjals. Pour the spice mixture over the brinjals and air-fry at 200°C for 20 minutes.

2. To make the lemonade mayo, blend all the ingredients in a food processor. Spread onto a plate and top with the baked brinjal. Spoon over the gremolata, scatter over the mint leaves, drizzle with olive oil and serve immediately.
