Ingredients

  • 10 1 10 pieces chicken( bone in and skinned)
  • 3 soft cooking potatoes
  • 300grams Rice (not basmati)
  • 50grams lentils
  • 1 Jam Tomatoes (finely chopped)
  • 25grams ginger & garlic paste
  • 1 brown onion ( finely chopped)
  • 50ml cooking oil
  • 50 grams Chilli Powder
  • 10 grams Garam Masala
  • 1 bunch coriander
  • 1 1 stem curry leave
  • half cup fresh mint

Cooking Instructions

Pre- Heat oil in a medium size pot.
1.Add onions and garam masala, cook until onions start to brown.
2. Then add in chopped tomatoes and cook for about 5 minutes.
3. Add chilli powder ( 1 heaped tablespoon for every 1kg of chicken, this will give a medium spiced breyani). Sautee for about a minute, then add in chicken pieces along with the ginger and garlic paste.
4. Mix well and then add in mint, whole or chopped ( depends on preference)
5. Add boiling water until it just covers the chicken and cook for 5minutes.
6. Then add rice and lentils( uncooked and unsoaked) into pot, make sure water level is just covering the entire mix.
7. Pre-heat oven to 200 degrees, add potatoes and then cook in oven for the next hour or until potatoes are done.
8. Tip : in order to make sure the breyani does not end up too dry or too soggy, keep making sure you add water so it just covers the mixture.
9. once done remover from oven , garnish with coriander and serve with sambals on the side.
