- 2 large firm ripe avocados
- 150 g firm tofu, drained
- 1 x 5 cm piece ginger, grated
- 3 spring onions, chopped, plus extra, shaved, to garnish
- 1 green chilli, chopped
- 2 T lime juice
- 1 T soy sauce
- Spring onion, shaved, to garnish
Scoop out the flesh of the avocados and blend with the rest of the ingredients.
Turn into a serving dish and chill to firm. Garnish with spring onion curls.
