Ingredients

  • 2 avocados
  • 1 T extra virgin olive oil
  • 4 free-range eggs
  • 2 T smoked chilli flakes
  • 2 T Parmesan
  • Sea salt and freshly ground black pepper, to taste

Cooking Instructions

Preheat the oven to 200°C.

Halve the avos and rub the inside of each half with the olive oil.

Crack an egg into the hollow of each avo half. Sprinkle with some Parmesan and smoked chilli

Sprinkle with some Parmesan and smoked chilli flakes. Bake for 10 minutes, or until the eggs

Bake for 10 minutes, or until the eggs are cooked to your preference. Season to taste.

Cook's Tip: Avos love bacon, balsamic and apple cider vinegar, chillies, cocoa, fresh coriander, lemon, mango, salmon, strawberries and white pepper.

    Cooked you Lemon Curd bread and butter pudding but added some orange and lemon candied peel. It was super – easy to prepare but was scrumptious with home made lemon curd. Since I live in the UK but visit SA every British winter it will be a firm favourite at any time of the year. Elissa Anderson
