- 12 rashers beech-smoked streaky bacon
- 100 g baby Rosa tomatoes
- 1 T olive oil
- 2 T balsamic vinegar
- 4 slices seed loaf
- 2 avocados, sliced
- Baby gem lettuce
Fry the rashers of beech-smoked streaky bacon in a hot pan until crispy.
In a separate pan, sear the baby Rosa tomatoes in the olive oil until charred, then add the balsamic vinegar and reduce until caramelised.
Top all the slices of seed loaf with the bacon, ripe sliced avocados, baby gem lettuce, good quality mayonnaise and the caramelised tomatoes.
