  • 2 T butter
  • 2 ripe red tomatoes, roughly chopped
  • 1 x 400 g Woolworths Italian crushed tomatoes can
  • 1 x 400 g butter beans can
  • 1 chilli, chopped
  • 4 T parsley, chopped
  • 1 t smoked paprika
  • Sea salt and freshly ground black pepper, to taste
  • 8 ciabatta, toasted
  • Cooked pork sausages, for serving

Melt the butter in a pan over a medium heat and cook the tomatoes until soft.

Add the crushed tomatoes and cook for 10 minutes. Add the butter beans, chilli, parsley and paprika. Season to taste and warm through.

Serve on the toast with the sausages.
