Spicy Cajun chicken, potatoes and vegetables roast together for an easy, flavour-packed dinner with minimal clean-up. The chicken stays juicy while the vegetables turn tender in the roasting bag, then everything is finished with a fresh herb, garlic and lemon dressing for brightness. It’s a simple all-in-one meal that works well for busy weeknights.

Ingredients

Method
  • 1x 8 piece Woolworths chicken drumsticks & thighs
  • 800 g Woolworths potato roasting vegetables
  • 2 T Taste Hack spicy Cajun paste
  • salt and freshly ground black pepper, to taste
  • 2 T olive oil
  • 10 g parsley, finely chopped
  • 10 g coriander, finely chopped
  • 10 g mint, finely chopped
  • 1 clove garlic, finely grated
  • 1 lemon, zest and juice

Method

Ingredients

1. Combine the chicken portions, roasting vegetables and the Taste Hack Spanish Tomato Paste in a large mixing bowl. Season with salt and freshly ground black pepper and coat in a drizzle of olive oil.

2. Ensure that all the ingredients are well coated in the tomato paste before putting in the roasting bag. Roast in the oven at 180°C for 35 minutes or until the veggies are tender and the chicken is cooked through.

3. Chop up any herbs that you have leftover in the fridge, like parsley, coriander and mint, combine it with the zest of a lemon and a finely grated clove of garlic. Mix with the juice of the lemon and serve spooned over the dish for a herby, zesty kick.
