  • 8 Roma tomatoes, sliced lengthways
  • 150 g Woolworths fresh fior di latte mozzarella, torn
  • 100 g sundried tomatoes, quartered
  • 16 black olives, smashed
  • 10 g basil
  • 2 stalks celery, roughly chopped
  • 1 T dill, roughly chopped
  • 3 T extra virgin olive oil
  • 1 T white wine vinegar
  • Maldon salt and freshly ground black pepper, to taste

Cooking Instructions

Place all the ingredients in a bowl and gently toss until well mixed. Season to taste.
