- 2 packed cups celery leaves
- 2 cloves roughly chopped garlic, crushed
- 60 g walnuts, roasted
- ¼ cup olive oil
- 75 g mature Cheddar, grated
- sea salt and freshly ground black pepper, to taste
Blend or process the celery leaves, garlic, nuts and oil to make a paste. Stir in the cheese and season to taste, adding more oil if necessary.
