  • 1 punnet cherry tomatoes
  • 1 sachet bocconcini (baby mozzarella balls), drained
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 crushed clove garlic
  • Handful of torn basil leaves
  • Coarse sea salt and milled black pepper to taste

Mix the ingredients together. Serve with toasted ciabatta.
