Chicken mayo sandwich

You can’t ever go wrong with a chicken mayo sandwich. And what makes this one even better is that it uses two types ready-to-eat sliced chicken breast: smoked and spicy. Mix them with gherkins, onion, mustard and mayonnaise, then layer that with salad cream and lettuce, and this is one sandwich you won’t soon forget.

Ingredients

Method
  • ½ red onion, finely diced
  • 4 T Woolworths dill gherkins, finely diced
  • 8 T Hellmans mayonnaise
  • 2 t wholegrain mustard
  • 2 t fresh dill, finely chopped
  • ½ lemon, juiced
  • 1 lemon, zested
  • 140 g 2 x punnets Woolworths Simply Add sliced spiced chicken breast
  • sea salt and freshly ground black pepper, to taste
  • 8 slices Woolworths thick-sliced brown bread
  • 4 T Woolworths salad cream
  • 80 g Woolworths Crunchita lettuce
  • 140 g 1 x punnet Woolworths Simply Add sliced smoked chicken breast
  • 80 g Woolworths whole dill gherkins, for serving
  • 22 g 4 x packets Woolworths salted pretzel knots, for serving

Method

Ingredients

1 In a medium bowl, mix the onion, gherkins, mayonnaise, mustard, dill, lemon juice and zest.
2 Add the spiced chicken breast to the mayonnaise and mix until well combined. Season with salt and pepper to taste.
3 Lay out 4 slices of bread, spread 1 T salad cream on each slice, then top with a layer of lettuce.
4 Divide the chicken mayo mixture into 4 equal parts, spread ¼ evenly over each slice of bread, then top with a layer of smoked sliced chicken breast.
5 Top with another slice of bread, cut to desired shape and serve with the whole gherkins and salted pretzel knots.
