- 8 free-range chicken thighs
- 4 Golden Delicious apples, halved
- 3 T olive oil
- ½ cup chicken stock (or apple cider)
- 2 T butter
- 8 cloves garlic, smashed
- 6 sprigs thyme
- Maldon salt, to taste
Preheat the oven to 180°C. Place the chicken and apples in a deep baking tray. Add the remaining ingredients.
Roast for 40–50 minutes, or until golden brown, basting regularly.
