Ingredients

  • 8 free-range chicken thighs
  • 4 Golden Delicious apples, halved
  • 3 T olive oil
  • ½ cup chicken stock (or apple cider)
  • 2 T butter
  • 8 cloves garlic, smashed
  • 6 sprigs thyme
  • Maldon salt, to taste

Cooking Instructions

Preheat the oven to 180°C. Place the chicken and apples in a deep baking tray. Add the remaining ingredients.

Roast for 40–50 minutes, or until golden brown, basting regularly.
