- 4 fresh gherkins
- 2 x 200 g tubs ready-to-eat prawn cocktail
- 1 lime, quartered
- freshly ground black pepper, to taste
- ground chilli flakes, for seasoning
Cut the gherkins into thin slices, then again into thin strips.
Place in small bowls and top with the prawn-cocktail mixture (see below).
Serve with fresh wedges of lime, black pepper and a scattering of chilli flakes.
Cook's note: if you can't find prawn-cocktail mix at Woolworths, make your own by mixing 2 cups of shelled, deveined prawns with your favourite mayo, and a dash each of of tomato sauce and horseradish sauce.
