- 350 g Woolworths exotic tomatoes, some halved and others left whole
- 200 g Woolworths barrel-aged Greek-style feta
- 4 T parsley, roughly chopped
- 1 red chilli, finely chopped
- For the dressing, mix:
- 2 garlic cloves, finely grated
- 1⁄4 cup red wine vinegar
- 1⁄2 cup extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
Place the tomatoes on a large serving dish, then drizzle over the dressing.
Cut or break the feta, then place on the tomatoes. Scatter over the parsley and chilli before serving.
