Fully loaded “lite” fries

30 - 40 minutes Ready to dig into the tastiest fully loaded fries of your life? Wayne Chang has you sorted with this lighter take on loaded fries. Think extra-lean mince and a cottage cheese-based sauce. Top with corn-and-coriander salsa for a spicy, flavourful pop.

- 300 g frozen French fries
- 500 g Woolworths extra-lean beef mince
- 1 T Cajun seasoning
- 1 T medium curry powder
- 1 green pepper, seeded and chopped
- 1 red pepper, seeded and chopped
- 125 g Woolworths corn-and-coriander salsa
- coriander, to garnish For the cheese sauce:
- 250 g smooth fat-free cottage cheese
- 50 g mature Cheddar, grated
- 1 T nutritional yeast
- salt, to taste
Method
Ingredients
1. Air-fry the fries for 20 minutes at 180°C or until golden and crispy.
2. Place the mince, Cajun seasoning and curry powder in a pan over a medium heat. Cook for about 8 minutes, then add the peppers and a little water and cook for a further 2 minutes.
3. To make the cheese sauce, place the cottage cheese, Cheddar, nutritional yeast and a splash of water in a blender and blend. Transfer to a saucepan and place over the lowest possible heat. Do not overheat or the sauce will split.
4. To serve, layer the fries, mince, cheese sauce and salsa on a platter and garnish with coriander.
