Gnocchi with a creamy cider and bacon sauce

Ingredients

  • 2 cloves garlic
  • 30 g butter
  • Olive oil
  • 8 rashers back bacon*
  • 2 T cider
  • 1 cup cream
  • ½ green cabbage
  • Al dente gnocchi
  • Parmesan

Cooking Instructions

Place cloves garlic, thinly sliced, butter and a splash of olive oil in a pan over a medium to high heat.
When fragrant, add  rashers back bacon and gently fry for 5 minutes or until crisp and golden.
Add cider and cream and reduce for 5 minutes. Fold in green cabbage, chopped, and allow to wilt.
Remove from the heat and toss with al dente gnocchi.
Serve with a generous grating of Parmesan.
Cook's note: Woolworths sells ready-made gnocchi that simply needs cooking in boiling water for 2 minutes. Or, try your hand at making gnocchi at home.
