Hake nugget tacos with smashed peas

Crispy tempura hake nuggets make these fish tacos quick and easy, while corn, apple and smashed peas add freshness, sweetness and texture. It’s a simple, flavour-packed take on fish tacos that works perfectly for an easy weeknight dinner.

Ingredients

Method
  • 200 g Woolworths Frozen Tempura Hake Nuggets
  • 2 cups frozen peas
  • 2 tbsp Double Thick Plain Yogurt
  • Sea salt and freshly ground black pepper, to taste
  • 2 tbsp coriander, finely chopped
  • 2 corn on the cob
  • 1 red apple, cut into matchsticks
  • 4 Woolworths White Tortilla Wraps
  • 4 lime wedges, to serve

Method

Ingredients

1. Place the Woolworths Frozen Tempura Hake Nuggets in a preheated air fryer of 180°C for 10 – 12 minutes, or until cooked and crispy.

2. Defrost the peas in a microwave-safe bowl for 5 minutes. Smash with a fork,stir through the yoghurt and coriander, and season well.

3. Char the corn on a griddle pan or an open flame. Remove from the cob.

4. Follow with toasting the tortillas. Immediately fold in half as you remove them from the heat and fill with smashed peas, hake nuggets, some corn and apple.

5. Serve with a generous squeeze of lime.
