Leftover tikka chicken curry with chicken fried rice

Turn leftover tikka chicken curry into a quick, flavour-packed fried rice with very little effort. Ready in minutes, it’s an easy way to reinvent leftovers into a completely different weeknight meal with bold spice and plenty of comfort.
Ingredients

- 2 tsp Woolworths Coconut Oil
- 1 kg Woolworths Chicken Fried Rice
- 250 g –300 g leftover Woolworths Tikka Chicken Curry
- ½ cup water
- Juice of one lemon
- Sea salt and freshly ground black pepper, to taste
- 5 g coriander or mint or basil (optional)
- 3 tbsp Woolworths Pomegranate Rubies (optional))
- 2 green chillis, finely chopped
Method
Ingredients
1. Heat the oil in a large non-stick skillet or wok over high heat. Add the Woolworths Chicken Fried Rice and toss for 2–3 minutes, or until heated through.
2.Lower the heat, add the leftover curry to the pan, loosening the gravy a little with some water and stir well.
3. Season with lemon juice, a little salt and pepper.
4. Garnish with fresh herbs, pomegranate and chilli, if using, and enjoy!
