- 700 g large marrows, thinly sliced
- 2 red chillies, finely chopped
- 2 lemons, juiced
- 3 T extra virgin olive oil
- 1 T honey mustard
Place the marrows in a large bowl and add the remaining ingredients. Mix, cover and chill for at least 30 minutes.
Place on a platter and pour over this roast tomato dressing
