Marinated melon with whipped feta and honey

Summer is the most perfect time to bring out every melon known to man, and revel in its sweet refreshment. This salad takes the sweet snack and makes it platter ready, for every lunch spread, sweet or savoury. The best part is that you can use your favourite melons and adjust the sweetness to your liking by adjusting the honey. Serve it alongside your favourite braai, with a charcuterie board or as a simple welcoming snack.

Ingredients

Method
  • 800 g Woolworths seasonal melon mix (watermelon, sweet orange melon, green melon)
  • 1 t Woolworths chilli and lime salt
  • 2 limes, zested and juiced
  • 1/3 cup Woolworths fynbos honey
  • 500 g feta cheese
  • 2 cups double-thick plain yoghurt
  • 1 T lemon zest
  • salt, to taste
  • ¼ cup extra virgin olive oil
  • fresh mint, finely sliced, to garnish

Method

Ingredients

1. Place the melon into a large bowl and season with the chilli-and-lime salt, lime juice and zest and half of the honey, tossing gently to combine. Chill to marinate.

2. Blend the feta, yoghurt, lemon zest and a pinch of salt until small crumbs form, then then drizzle in the olive oil and blend until the feta is whipped and smooth.

3. Spoon the whipped feta onto a serving platter, using the back of a spoon to smooth the top. Drizzle over the remaining honey, then top with the marinated melon and garnish with mint and lime zest. Serve cold.

Cook's note: The whipped feta will lose some of its airy, smooth texture when chilled, so serve immediately or make it just before serving.
