Mini banana flapjacks

Ingredients

Method
  • 210 g cake flour
  • 2 t baking powder
  • ¼ t salt
  • 50 g sugar
  • 2 free-range eggs, beaten
  • 1 cup milk
  • 2 T butter, melted
  • 2 bananas, sliced
  • oil, for frying
  • butter, for serving
  • maple syrup, for serving

1. Mix the dry ingredients. In a separate bowl mix the eggs, milk and butter.

2. Add the dry ingredients to the wet while whisking. Fold in the banana slices.

3. Heat a drizzle of oil in a pan over a low to medium heat. Fry the flapjacks, getting 1 round of banana in the centre of each mini flapjack. Flip and fry until golden on both sides.

4. Serve with butter and maple syrup.
