Ingredients

  • For the crumble:
  • 75 g butter
  • 120 g flour
  • 50 g brown sugar
  • 50 g oats
  • 50 g desiccated coconut
  • 2 t ground cinnamon
  • 8-10 nectarines, sliced
  • 1 lemon, zested and juiced
  • 50 g treacle sugar
  • 100 g butter, diced
  • vanilla ice cream, for serving

Cooking Instructions


1. To make the crumble, rub the butter into the flour with your fingertips or process in a large blender until the texture of fine breadcrumbs. Combine with the remaining ingredients. Mix well and set aside.
2. Preheat the oven to 180°C. Combine the nectarines, lemon juice and zest, sugar and butter and arrange in an ovenproof dish. Top with the crumble mixture. Bake for 35–40 minutes or until golden brown and bubbling. Serve warm with vanilla ice cream.
